Serves 4
Ingredients :
1 tin corned beef
2 hard boiled eggs, sliced
2 cups breadcrumbs
1 onion, chopped
100 ml milk (+/-)
1 egg
1 tomato, chopped
30g margarine
chopped spring onions (optional)
Method:
Fry chopped onions in margarine.
Mix the fried onions with the corned beef (flaked), most of the breadcrumbs, egg, chopped spring onion (optional) and a little milk to give a sticky consistency.
Place half the mixture in a baking dish.
Arrange the hard boiled egg slices and chopped tomato over this.
Add the rest of the corned beef mixture.
Cover with tomato and remaining breadcrumbs.
Bake at 180C for about 45 minutes.
Serve with mashed potato.
