Ingredients :
50ml salt
2 litres water
1 cauliflower, broken up into little florets
4 carrots, cleaned and cut into strips
2 onion, roughly chopped
4 chillies - deseeded and finely chopped
2 cloves of garlic, finely chooped (or crushed)
1 litre of vegetable oil
80ml pickling masala (or normal masala)
Method :
Dissolve the salt in the water and add the carrots, cauliflower and onions.
Soak for 24 hours then drain and pat dry.
Heat the oil with the chillies, garlic and masala.
Add the vegetables and place in strerilised, airtight jars.
Allow to cool and then seal.
Let the pickles stand for at least a week before using.
